No Bake (Protein) Balls


I always wanted to find a good recipe for no bake balls - ha, I love the sound of that. 

While digging through a million of them on good old Pinterest, I read BISCOFF and was sold. 

This recipe is adopted from the Herbivore Triathlete

1/4 cup gluten free/vegan peanut butter
1/2 cup Biscoff
1/4 cup unsweetened apple sauce - I put a tad less
1/2 teaspoon vanilla
3 tablespoons almond meal
3 tablespoons whole wheat pastry flour
1/2 cup rolled oats - I added a tablespoon extra
2 tablespoons medium shredded unsweetened coconut
2 tablespoons vegan carob chips
Optional: No more than two scoops of desired protein, I used Arbonne Vanilla protein mix

Taken directly from Herbivore Triathlete's website...

  1. In a medium bowl combine all wet ingredients using an electric hand mixer.
  2. Add flours and combine.
  3. Add in oats, coconut, carob chips and optional protein.
  4. Roll into balls, approximately one tablespoon each and place onto parchment lined baking tray.
  5. Refrigerate (or freeze) until firm.





I heated up then drizzled Biscoff spread and dark chocolate to add a tiny bit more sweetness. 

I also had about three spoons fulls of cookie butter straight out of the jar...don't judge.
