Mini S'more Cupcakes


Yesterday was a rough one for me but baking always kicks my bad mood to the curb...even if only for a couple hours. I was craving s'mores and cupcakes so here is what it led to - not only did I chain eat about six of these but they are the perfect size so you don't feel too guilty about your diet choice at that moment.

I present to you mini s'more cupcakes that anyone can do.

Mini S'more Cupcakes 
1 box of Duncan Hine's Devil's Food cake mix
1 package of mini cupcake liners
1 jar of Marshmallow fluff creme
1 package of dark chocolate Ghirardelli chips
1 box of cinnamon graham crackers

1. Mix and bake mini cupcakes as directed on box - I do a minute under baking time to keep them more moist, these suckers bake quick so make sure you keep your eye on them! I burnt my first batch.
2. Let them cool completely.
3. While they are cooling, crumble graham crackers into a large enough bowl where you can dip the mini cupcake with no problems.
4. Take a knife and push the tip of the knife down the middle of each mini cupcake.
5. Fill ziplock bag with marshmallow fluff and snip off the tip.
6. Place the tip all the way down in the cupcake and squeeze until it sorta over flows - the cupcake will push apart and for me, that was the sign it was perfectly filled.


7. Melt the Ghirardelli dark chocolate chips in the microwave - stir every 30 seconds.
8. Using a butter knife, brush on dark chocolate as desired - you can dip them or just add a touch of the chocolate.


9. Directly after, dip the cupcake into the crumbled graham crackers and voila!
