Sugar Cookie Bars

First and foremost, happy Thursday!

I had a lot of things on my to-do list yesterday...from laundry, to cleaning my entire place, moping the floor, spray painting some patio furniture, working out all the while wanting accomplish this before I headed down to visit some friends...what do you think won that wasn't even on the list? 

SUGAR COOKIES....well sugar cookie bars but still...baking won! No if's, and's or but's about it.

That's how that saying goes right? 

Anyway, I haven't baked a thing all week and since I was going to visit some friends I haven't had a chance to bother in a while - I wanted to bring them something sweet so it would distract them from me updating them on my life.

Everything is so much better with a mouth full of sugar? No? Yes, yes it is. #letmelive

My aunt has a phenomenal sugar cookie recipe but I had no time to refrigerate the dough overnight since I only had about four hours so I turned to pinterest! I found these Sugar Cookie Bars and decided to give them a whirl.

I didn't alter the recipe but I used Magnolia bakery's buttercream frosting instead of what they list there...it's my go to frosting, you'll thank me later if you don't use it already.

Magnolia Bakery's Buttercream
1 cup (2 sticks) unsalted butter, softened
6 to 8 cups of confectioners' sugar
1/2 cup milk
2 teaspoons vanilla extract
  1. Place the butter in a large mixing bowl
  2. Add 4 cups of sugar (I let the butter and sugar mix until smooth) 
  3. Then I add the milk and vanilla
  4. Beat that for 3 minutes (the iPhone timer is my BFF during this process)
  5. Gradually add the remaining sugar, 1 cup at a time and beat well for 2 minutes each addition
You may not need to add all the sugar, you decide on the consistency you like. For these sugar cookies, I made half this entire recipe.

I also ate a couple spoonfuls and felt like I could run a 5k but who am I kidding? I don't run, ever.

Prep time: 30 minutes (10 of those minutes are bake time)
Time to make frosting: 10 minutes
